The key is to look for heritage breed pork.
Meat from industrial feed lot pigs is what you normally find the supermarket. These pigs only have 6 months to live, whereas heritage breed pigs have 2 years to live. Even if you don’t care about the lifespan of the animal, how does this affect you?
The longer the pig has to live, the more complex flavors it builds up, which gives you a better tasting end product.
If you want the best tasting pork out there, find a local farmer who raises heritage breed pigs.
