Fresh & Easy No Cook Pasta Sauce

What You’ll Need:

Heirloom tomatoes (or any seasonal fresh tomatoes)

Garlic

Basil

Pasta



What You’ll Do

  1. Peel the tomatoes: the best way to do this is bring a pot of water to boil. Turn the tomatoes over and score an X into the bottom before adding them to the pot. Immediately the skin will begin curling away. After about a minute, remove the tomatoes and then using a paring knife, or your fingers, peel the skin away.
  2. Core the tomato by cutting down into the middle, around the stem. Then slice and cube the tomato (an optional step is to seed the tomato) and then add the chopped tomatoes to a large bowl.
  3. Peel a couple cloves of garlic and either cut them in half or crush with the side of a knife. Add those to the tomatoes and stir well. Tear a couple handful of fresh basil and add to the bowl as well as a few generous pinches of salt and pepper. Stir and let sit (the longer the better. This can be done hours in advance which makes it easy for a gathering or dinner party)
  4. When you’re ready to eat, cook up some spaghetti, drain and toss into the fresh sauce. Remove the garlic, add some basil on top and serve with a drizzle of olive oil and Parmesan
