Chop off the beet roots and store them in your fridge. Don't throw away the tops! Here are some uses for beet tops:
1. Sauté them in oil as a side dish
2. Enjoy raw in a salad for a bitter green
3. Make into a pesto or other favorite sauce
4. Add to a hearty fall soup
