Most hummus at the grocery store contains preservatives. The role of preservatives in food is to stop the processes of oxidation and bacterial growth. You might be thinking that’s a good thing, but once you consider what chemical preservatives can do to your body, you may decide to avoid them in your diet. Studies have shown that certain chemical preservatives may be harmful to your intestinal tract because they can kill the “good bacteria” needed for digestion and nutrient absorption.
One of the promises Ithaca Hummus makes to their community is they will never use any preservatives or artificial ingredients in any of their products. Instead, they use a process called High Pressure Processing (HPP) to control the food safety of their hummus. They also refuse to compromise on ingredients. When they say lemons, they mean real lemons. Unlike most brands who blend their hummus while the chickpeas are still hot, they cool the chickpeas and blend their hummus cold to keep the ingredients fresh and full of flavor. And you'll taste the difference.
