Three years in the making, this original shape was created in collaboration with James Beard Award winner and podcast host Dan Pashman. Cascatelli, Italian for “waterfalls”, is designed to maximize the three qualities by which Dan believes all pasta shapes should be judged: sauceability (how readily sauce adheres to the shape), forkability (how easy it is to get the shape on your fork and keep it there) and toothsinkability (sow satisfying it is to sink your teeth into it). It was a Good Food Awards finalist and pairs well with just about any sauce.
Dried pasta at the supermarket lacks texture and flavor, meaning it has a harder time clinging to the sauce. It's made with flour from conventional wheat, which is grown with pesticides and herbicides.
