Mass-produced, processed cheese is almost not cheese at all. On top of that, the milk often comes from factory farms, where dairy cows are mistreated and given growth hormones to increase milk production, which ultimately requires higher levels of antibiotics.
Jake's Gouda handcrafts their cheese with high quality milk from their own 200-acre dairy farm in Deansboro, New York. They don't use any high temp pastuerization and follow a traditional Dutch method of cheesemaking. The cheese is turned daily as it ages on pine planks to ensure uniform aging.
