The Problem
The majority of commercial seed milks you'll see in the grocery store use emulsifiers and pasteurization to extend the shelf-life of their product. They're designed to sit in un-refrigerated warehouses, move in un-refrigerated trucks as they travel across the country, and sit on grocery shelves for up to 2 years (yuck!).
